Pork carnitas

One of the most well know traditional dishes form the Mexican Cuisine, originated in the state of Michoacan, Carnitas are traditionally cooked in a thick-bottomed pot making sure the heat is dispersed evenly. The best pieces of pork are handpicked to be specially cooked on its own lard, once the lard has melted to the exact point, a variety of special spices (usually salt, oregano, garlic, and citrics) are added achieving the special caramel crisp golden brown on the outside while extremely tender and juicy on the inside. This traditional process last from 3 to 4 hours.

Like barbacoa, carnitas is considered a delicacy, a treat, a special-occasion food, generally to be found at mom and pop small restaurants, communities that come together to prepare this complicated-to-make traditional dish or at the most important moments like weddings, quinceñeras or any important social occasion.
